Tuna & Veggie Salad     

Ingredients:
For two sandwiches:
2-to-3 oz. package of tuna
1/2 cup diced onion
1/2 chopped tomato
1/2 to 1 whole avocado
1/4 cup chopped parsley
1 Tbsp lemon juice
2 Tbsp olive oil
1/2 tsp kosher salt
fresh ground black pepper

Preparation:
Combine tuna, onion, tomato, avocado, and parsley. Whisk together remaining ingredients and mix in.
