Jalapeno Hot Sauce     

Ingredients:
8 Cups fresh jalapenos, cleaned
½ cup Apple cider vinegar
½ cup Lime juice
2 tsp Salt

Preparation:
Lightly roast jalapenos while occasionally spraying with water.

Place roasted jalapenos in covered container and let steam for 1 hour.

Remove stem ends. (It is a good idea to wear gloves while handling and cutting jalapenos)

Remove seeds and skins if you are able. Some food processors or juicers will remove seeds and skins.

Puree jalapenos.

You should have about 3 cups pureed jalapenos.

Combine jalapeno puree with Apple cider vinegar, Lime juice, Salt.

Store in refrigerator or can using water bath method in half pint jars for 15 minutes.
