Canned Tomatoes     

Ingredients:
Tomatoes - about 20 lbs
Lemon juice (bottled)
Salt

Preparation:
Place tomatoes, a few at a time in a large pot of boiling water for 30-45 seconds, then plunge in ice water. The skins will slide right off. Remove the skins, bruises, and tough parts.

Cut tomatoes into quarters if desired. Fill the warm jars with the whole or cut tomatoes, to within 1/4 inch of top. Add 2 Tbsp. lemon juice and 1/2 tsp. salt to each jar. Fill to 1/2 inch of top with boiling water. Free trapped air bubbles.

Put lids and rings on. Process quarts for 45 minutes.
