Herbed Grits
Ingredients: 1 cup heavy cream
1/4 cup unsalted butter
1 tsp. kosher salt
1 tablespoon fresh thyme leaves
1 1/2 cup white wine
1 1/2-2 1/2 cups chicken broth
1 1/2 cups speckled stone-ground grits
2 green onions, chopped
1/4 cup chopped fresh curly parsley
Preparation: Combine the heavy cream, butter, salt, thyme, wine, and 1 1/2 cups of the broth in a large saucepan. Whisk in the grits. Bring the mixture to a boil, whisking constantly. Reduce the heat to low and simmer, stirring occasionally, until the liquid is absorbed and the grits are creamy, about 30 minutes. (Add up to 1 more cup of broth if needed until the grits are tender.)
Remove the pan from the heat and stir in the green onions and parsley. Season with additional salt and pepper to taste.
