Garlic Butter Salmon
Ingredients: 2 salmon fillets
1 Tbsp. butter
2 Tbsp. olive oil, divided
2 cloves garlic, minced
8 oz mushrooms, sliced
5 oz fresh spinach
1/2 cup light cream
1/4 cup white wine or chicken broth
2 Tbsp. lemon juice
2 Tbsp. chopped fresh parsley
Preparation: Heat 1 tablespoon olive oil and butter in a small saucepan. Add garlic and heat until fragrant. Stir in cream and wine, reduce until thickened slightly. Stir in lemon juice and parsley, set aside.
Meanwhile, heat remaining olive oil in a large skillet. Stir in garlic and mushrooms. Cook until mushrooms are cooked down and slightly browned. Stir in spinach and cook until wilted.
Grill salmon until internal temperature reaches 130 degrees. Remove from heat, cover and allow to rest a few minutes.
Serve salmon on top of mushrooms and spinach, top with garlic butter sauce.
