Sauteed Spinach with Caramelized Shallots     

Ingredients:
21 oz Taiwanese Spinach or spinach
4 cloves minced garlic
2 shallots, sliced thin
6 tsp mirin
6 tsp oil for cooking

Preparation:
Heat sauté pan, add oil, then minced garlic. Sauté until garlic softens, then add shallots. Sauté for about 2 minutes. Add greens and let wilt. Finish with mirin and salt and pepper.
