Garlic Parmesan Chicken Skewers
Ingredients: 2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
2 Tbsp olive oil
2 lbs chicken tenders, thighs or breast
Garlic Parmesan Butter Sauce:
1 stick butter
8-10 cloves garlic, minced
1/2 cup parmesan, grated
1 tsp hot sauce, or to taste
2 tsp red pepper flakes
1/3 cup fresh parsley, minced
Preparation: Combine paprika, garlic powder, onion powder, salt, and pepper in a small bowl, set aside. Cut chicken in 3" pieces. Place in a large ziploc bag with olive oil and spices. Toss until well coated on all sides. Place chicken on skewers with no space in between.
Add the butter and garlic in a microwave-safe bowl and heat until partially melted. Add in red pepper flakes, hot sauce, parsley, and parmesan. Whisk together until combined. If sauce separates, add 1-2 tablespoons of softened butter and stir to re-emulsify.
Scoop out 1/3 of the sauce and use that for basting the chicken. Reserve the remaining sauce for basting the cooked chicken.
Cook in air fryer at 400 degrees for 5 minutes. Flip skewers, baste with sauce and cook an additional 2 minutes at 400 degrees. Or bake in 450 degree oven 14 minutes, flipping halfway through and basting frequently. Broil an additional 2 minutes until brown. Or grill 5-6 minutes each side, basting throughout.
After cooking, baste generously with butter mixture and sprinkle with additional parmesan.
