Cinnamon Rolls
Ingredients: Dough:
2 pkg. dry yeast
1 1/2 cup very warm water (120-130 degrees)
4 cups bread flour
1 tsp. salt
1 Tbsp. sugar
Filling:
3/4 cup brown sugar, packed
3 Tbsp. cinnamon
1/2 cup butter, softened overnight
Icing:
1/4 cup butter, softened
4 oz. cream cheese, softened
1 1/2 cups powdered sugar
1 Tbsp. vanilla
Preparation: Soak yeast in water for 5 minutes. Add flour, salt and sugar and mix to blend. Knead for 2-3 minutes until flour is well blended. Cover and let rise in a warm place for 15 minutes. Roll dough to 1/4 inch thick, about 12x16 inches.
Grease a 9x13 baking dish with butter. Combine brown sugar and cinnamon. Spread butter evenly over dough, then sprinkle cinnamon mixture over butter. Roll dough from long edge. Cut into 1 1/2 inch slices, place cut rolls in prepared baking dish. Bake at 350 degrees for 30 minutes.
Meanwhile, mix icing ingredients and beat well until fluffy and smooth. Allow rolls to cool slightly, then spread generously with icing.
