Beef Tips & Gravy with mashed potatoes     

Ingredients:
1 tbsp olive oil
1 onion chopped
1 pound Sirloin Steak
16 oz Mushrooms
1 cup Red Wine
2 cups beef broth
5 potatoes, peeled and chopped
3 tbsp Corn Starch
1 tbs Kitchen Bouquet or beef bouillon

Preparation:
Place instant Pot on sauté, add olive oil and chopped onion. Cube steak into 1" pieces, add steak to the Instant Pot Allow to brown on each side about 1-2 minutes.

Pour in red wine, reduce by one half. Pour in beef broth and add mushrooms. Place potatoes in a steamer basket on top of mushrooms.

Place Pot on MANUAL HIGH PRESSURE for 15 minutes, Quick Release. Remove potatoes and mash. Place Pot back on sauté and remove 1 cup of the liquid. Make a slurry with the cornstarch and add it back in the pan. Stir in Kitchen Bouquet. Continue on sauté until sauce gets thick, about 2 minutes. Serve over mashed potatoes.
