Tennessee BBQ Sauce     

Ingredients:
2 cups tomato sauce
3/4 cup chili sauce
3/4 cup Coke
2 tablespoons fresh lemon juice(save rind)
2 tablespoons spicy/dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 teaspoon liquid smoke
1 teaspoon hot sauce
1/4 cup firmly pack dark brown sugar
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dry mustard
Coarse kosher salt

Preparation:
Combine the tomato sauce, chili sauce, Coke, lemon juice and rind, prepared mustard, Worcestershire sauce, liquid smoke, hot sauce, brown sugar, pepper, garlic powder, onion powder, and dry mustard in a heavy saucepan, whisk to mix and gradually bring to a simmer over medium heat. Let simmer until thick, 20-30 minutes, stirring often to prevent scorching. Taste for seasoning, adding more hot sauce as necessary and seasoning with salt to taste.

Remove and discard lemon rind. Strain the sauce into a glass jar and let cool to room temperature and then refrigerate.

Makes about 1 quart.
