Dr Pepper BBQ Sauce
Ingredients: 2 large lemons
2 gloves garlic, peeled & lightly crushed
2 slices, onion
2 cups Dr Pepper
1 1/2 cup ketchup
6 tablespoons Worcestershire sauce
4 tablespoons steak sauce
1 tablespoon hot sauce
2 tablespoons cider vinegar
2 teaspoons liquid smoke
1 teaspoon freshly ground pepper
Coarse kosher salt
Preparation: Cut the lemons in half crosswise and cut a 1/4 wedge off one-half. Remove any seeds in the wedge. Juice remaining lemons.
Combine lemon wedge, 4 tablespoons lemon juice, garlic, Dr Pepper, ketchup, Worcestershire sauce, steak sauce, hot sauce, vinegar, liquid smoke, and pepper in a heavy saucepan, whisk to mix and gradually bring to boil over medium heat.
Reduce heat and gently simmer until sauce is thickened, 10 to 15 minutes. Taste for seasoning, adding more lemon juice, hot sauce, and/or vinegar as necessary and seasoning with salt to taste.
Strain the sauce into a glass jar and let cool to room temperature and then refrigerate.
Makes about 1 quart.
