Mexican Street Corn
Ingredients: 1 lb. frozen corn or 4 corn on the cob
2 Tbsp. mayonnaise
2 Tbsp. sour cream or Mexican crema
1 1/2 tsp lime juice
1/4 tsp garlic salt
1/2 tsp chili powder
1/4 cup crumbled queso fresco, plus more for serving
2 Tbsp. chopped cilantro
Tajin, for serving
Preparation: Combine mayonnaise, sour cream, lime juice, garlic salt, and chili powder.
For corn on the cob (elotes), peel back husks and remove silk. Spread sauce over corn. Grill until done. Sprinkle with chili powder, queso fresco and cilantro before serving.
Corn kernels (esquites) may be heated and topped with sauce. Sprinkle with Tajin, queso fresco and cilantro.
