Pork Ramen
Ingredients: pork shoulder
onion, chopped
1/2 lb. crimini mushrooms, sliced
leek
6 cloves garlic, minced
ginger root
8 cups chicken broth
ramen noodles
green onions, chopped
bean sprouts or enokitake
soft boiled eggs, 1 per serving
Preparation: Sear roast on all sides. Place onion, mushrooms, leek, garlic, and ginger root in the crock pot and place roast on top. Pour chicken broth over. Cook on low 8 hours. Slice roast. Serve over ramen noodles with broth from crock pot, green onions, bean sprouts, and a soft boiled egg.
