Lemon No-Bake Cheesecake
Ingredients: Shortbread Pie Crust:
6 ounces finely crushed shortbread cookies
1/2 tsp. of lemon zest
2 tablespoons butter, melted
Lemon Filling:
24 ounces cream cheese, softened to room temperature
1 1/3 cup confectioners sugar
Juice of 1 lemon, about 1/4 cup
1 teaspoon lemon extract, or more to taste (taste test as you go!)
pinch kosher salt
yellow food color for presentation, optional
2 cups Cool Whip
Preparation: In a large bowl, combine the shortbread cookie crumbs and lemon zest with the melted butter. Pour into a prepared 8 in pie dish and firmly press to the edges to form a pie crust.
In a large bowl, beat the cream cheese until it is light and fluffy. Add in the confectioners' sugar, lemon juice, lemon extract, salt, and yellow food color. Beat until everything is combined. Gently fold in the Cool Whip. Pour filling mixture into prepared pie crust. Refrigerate for 2 – 6 hours.
