Roast Chicken with Aleppo and Za'atar
Ingredients: Whole chicken cut up, thighs and/or breasts, bone in with skin
2 tablespoons kosher salt
4 tablespoons unsalted butter
2 teaspoons Aleppo pepper
1 1/2 teaspoons za'atar
Preparation: Place chicken on an oven safe wire rack in a sheet pan. Rub the chicken on all sides with salt. Flip skin-side up, refrigerate uncovered 8-12 hours.
About 2 hours before you're ready to serve, place a rack in the top of the oven and place a pizza stone on it. Place another rack 6 inches below the top rack. Preheat oven to 500 degrees for at least 1 hour. While the oven is heating, remove the chicken from the refrigerator and allow to come to room temperature.
Combine the butter, Aleppo pepper and za'atar in a small saucepan. Place over low heat and cook stirring occasionally, until the butter is red and fragrant, about 5 minutes.
Turn chicken skin side down and brush with half the butter mixture. Transfer to the oven rack below the pizza stone and roast for 10 minutes.
Remove the pan with the chicken, turn skin side up and brush the skin with the remaining butter mixture. Return to the oven and continue to roast until internal temperature is 160 degrees, about 15-25 minutes.
Remove the chicken to a cutting board and let rest for 10 to 15 minutes before serving.
