Sushi Bake     

Ingredients:
1 1/2 cups uncooked sushi rice
2 tbsp rice vinegar
1 tbsp white sugar
1/2 tsp salt
10 oz imitation crab
8 oz salmon
4 oz cream cheese, softened
1/3 cup kewpie mayonnaise
1 Tbsp sriracha
Sriracha Mayo
Furikake or seaweed sheets, crumbled
Sesame seeds
Green onion, chopped
Seaweed snacks
Soy sauce

Preparation:
Preheat the oven to 400F.

Cook sushi rice according to package instructions. Add rice vinegar, sugar, and salt and gently mix until well combined. Spread rice into 9x9 inch baking dish, sprinkle with furikake seasoning.

Season salmon with salt and pepper. Cook in air fryer at 400F for 10-12 minutes or bake it in the oven at 375F for 15-17 minutes. Remove skin.

In a large bowl, shred imitation crab and cooked salmon into pieces. Stir in cream cheese, sriracha and mayo. Mix everything together until smooth and well combined.

Spoon salmon-crab mixture on top of rice. Gently press down and smooth the surface, sprinkle with more furikake. Bake at 400F for 10-15 minutes.

When done baking, top with Sriracha mayo, furikake, sesame seeds, and chopped green onions. To serve, scoop a spoonful of sushi bake onto a seaweed snack and dip in soy sauce.
