Middle Eastern Slaw
Ingredients: 1/2 of a small head of cabbage
2 Tbsp olive oil
1 Tbsp lemon juice
3 cloves garlic minced
½ tsp salt this is for salting the cabbage, plus additional to taste
Fresh ground pepper
Preparation: Begin by cutting the head of cabbage in half. Remove core, thick stem, any tough leaves, and loose outer leaves. Cut the cabbage into long and thin slices.
Place cabbage in a colander and sprinkle salt over the cabbage. Massage the salt into the cabbage and allow it to sit for 30 minutes. After 30 minutes, rinse the cabbage and squeeze out all the excess water.
Place cabbage in a bowl and add olive oil, lemon juice, and garlic. Mix well and then add salt and pepper to taste.
