Teriyaki Chicken with Pineapple
Ingredients: 2 boneless and skinless chicken breast
1 cup of fresh pineapple chunks
1/4 cup teriyaki sauce
1 tablespoon of olive oil
1 red pepper, sliced thin
1 carrot, sliced thin
1 zucchini, sliced
2 chopped green onions
Preparation: Preheat oven to 400 degrees. Cut two large pieces of aluminum foil.
Place one chicken breast on each piece of foil, drizzle with olive oil and season with salt and pepper. Top each chicken breast with pineapple chunks, pepper, carrot, and zucchini slices. Pour teriyaki sauce evenly over the chicken and vegetables.
Fold the foil sides over the chicken and seal. Place aluminum packages on a baking sheet and bake 25-30 minutes. Garnish with green onions before serving.
