Asian Chicken Cranberry Salad     

Ingredients:
1 small bag of coleslaw mix
2 cups rotisserie chicken, finely chopped
1/2 cup toasted sliced almonds, or cashews
1 cup dried cranberries
1/4 cup red onion, finely diced
1/2 cup sesame sticks
1 cup chopped cilantro
2 small cans mandarin oranges, drained
1/2 cup extra-virgin olive oil
1/4 cup balsamic vinegar
2 Tbsp. soy sauce
2 cloves garlic, chopped
2 Tbsp. honey or brown sugar
2 Tbsp. minced ginger
1 Tbsp. water
1 tsp. toasted sesame oil

Preparation:
Layer the cabbage in a large bowl with chicken, almonds or cashews, cranberries, red onion, sesame seeds, sesame sticks, and fresh cilantro. Add the mandarin oranges.

Combine the olive oil, balsamic vinegar, soy sauce, garlic, honey, ginger, water, and sesame oil in a blender. Blend until smooth.

Lightly pour the dressing over the salad mixture, according to how moist you like the salad. Gently toss and serve.
