Blackened Fish Tacos     

Ingredients:
Sauce:
1/2 lime, juiced
1/4 cup sour cream
1/4 cup mayonnaise
1/2 tsp. garlic salt
1 chipotle pepper in adobo sauce
1/4 cup cilantro

Fish:
1 Tbsp garlic powder
1 tsp. paprika
1 tsp. onion powder
1/2 tsp. cayenne pepper
1 tsp. thyme
1 tsp. basil
1 tsp. oregano
1 tsp. salt
1/2 cup butter, melted
2 lbs. white fish, cut into 1 inch thick fillets
3 Tbsp. olive oil

Tortillas
Purple cabbage, shredded
Cilantro, chopped
Queso Fresco, crumbled
Lime wedges

Preparation:
In a food processor combine lime juice, sour cream, mayonnaise, garlic salt, chipotle pepper, and cilantro. Blend until smooth, refrigerate until ready to serve.

Combine garlic powder, paprika, onion powder, cayenne pepper, thyme, basil, oregano, and salt. Gently dip fish pieces in melted butter. Place on a plate and sprinkle generously on both sides with blackening seasoning.

Coat a cast iron skillet with olive oil and heat on medium high heat. Place coated fish in hot skillet and sauté for 2 minutes on each side or until fish is cooked and flaky in the middle.
