Minty Mojito Ice Cream     

Ingredients:
1 cup whole milk, chilled
2 cups heavy cream, chilled
3/4 cup sugar
1 tsp. vanilla
1 tsp. spearmint extract
1 cup mint leaves

Preparation:
In a medium bowl, whisk to combine milk, cream, and sugar until sugar is dissolved. Stir in vanilla, spearmint, and mint. Cover and refrigerate 4 hours or overnight. Remove mint. Pour into ice cream machine and mix until thickened.
