Mushroom Feta Pasta
Ingredients: 1/2 lb cavatappi
1 red onion, sliced thin (optional)
1 lb mixed mushrooms
1 tsp. thyme
fresh ground pepper
block of feta cheese
¼ cup extra virgin olive oil
6 oz baby spinach
Squeeze of lemon
Preparation: Preheat the oven to 400°F. If adding onions, sauté lightly to soften.
Slice mushrooms and onion and place into an oven dish. Drizzle over the olive oil, add thyme and pepper, and stir. Add the block of feta in the middle of the dish, add another drizzle of olive oil. Bake in the oven for 25 minutes until mushrooms are nicely golden and feta has softened.
Prepare pasta per package directions, reserve water. Add spinach to pasta water the last minute of cooking. Stir spinach and cooked pasta into mushrooms. Add pasta water if necessary. Add a squeeze of lemon to serve.
