Olive Salsa
Ingredients: 1 large onion, cut into 8 wedges
2 Tbsp. olive oil
1 tsp. sugar
2 cup tomatoes, seeded and chopped
1/3 cup green olives, pitted and chopped
1/3 cup Greek olives, pitted and chopped
3 Tbsp. fresh basil, chopped
1 Tbsp. capers, drained
2 tsp. red wine vinegar
1 tsp. anchovy paste
Pita crips to serve
Preparation: Preheat oven to 450 degrees. Place onion wedges on baking sheet and brush with 1 Tbsp. olive oil and sugar. Season with salt & pepper. Roast until golden brown, turning occasionally, about 30 minutes.
Combine remaining ingredients in large bowl. Chop roasted onion and combine with remaining 1 Tbsp. olive oil and stir into tomato mixture.
