Meatballs     

Ingredients:
Tomato Sauce
4 cups chopped tomatoes
1 tsp onion powder
1 tsp garlic salt
1/2 tbsp Italian Seasoning
1/2 tsp red pepper flakes optional
1/2 tsp black pepper
2 bay leaves

Meatballs
1.5 lb lean ground beef
6 slices bacon
1 egg
1/2 onion small
2 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1/2 tbsp parsley
1 tsp coconut aminos

Toasted Garlic Ricotta Topping
1 cup ricotta cheese
1/4 cup mozzarella cheese
4 tsp minced garlic
2 tbsp olive oil

Preparation:
Tomato Sauce
Oil the whole inside of the Instant Pot liner with olive oil. Add all the ingredients for the sauce into the Instant Pot. Stir the sauce so that the seasonings are mixed into the sauce.
Turn the Instant Pot to sauté.

Meatballs
Combine all the ingredients for the meatballs in a food processor. Next, roll the meatballs about the size of a golf ball. Once the meatballs are formed, arrange them in the tomato sauce in the Instant Pot. Pour 1/2 cup water over the sauce, do NOT stir the water into the sauce. Cook the meatballs and sauce on high pressure for 8 minutes, natural release.

Toasted Garlic Ricotta Topping
Mix all the topping ingredients together in an oven safe dish. Bake the topping at 400 degrees F for 10-15 minutes. Remove from the oven. Serve the meatballs with ricotta topping.
