Creamy Tomato Soup
Ingredients: 1 Tbsp. butter
1/4 onion, diced
2 cans diced tomatoes
1/2 cup chicken stock
1 Tbsp. sugar
1 1/2 tsp. basil
1/4 cup heavy cream
Preparation: Melt butter in Instant Pot on saute mode, cook onion until softened. Add tomatoes, chicken stock, sugar and basil. Cook on high pressure 7 minutes, quick release. Blend with immersion blender, stir in cream.
