Quick Chicken & Dumplings     

Ingredients:
2 lbs boneless chicken breast
16 oz frozen mixed vegetables
1 26 oz can Cream of Chicken Soup
1 10.5 oz can Cream of Celery
16 oz. Chicken stock
1 can refrigerated biscuits

Preparation:
Cube chicken breast, coat generously with salt and pepper. Add to Instant Pot (without rack). Add vegetables, can of cream of celery, half can of cream of chicken, and chicken stock; stir well. Add remaining cream of chicken to the top (do not stir). Open can of biscuits and cut each one into 8 sections, place on top of chicken mixture. Place lid on top and lock into place making sure it is set to sealing position. Cook on Manual for 5 minutes, natural release.
