Warm Tortellini Salad
Ingredients: 18 oz. Fresh tortellini
1 lb. Fresh asparagus
1-1/3 cup Cherry or grape tomatoes
1/2 cup Red onion
18 Kalamata or black olives
1 can Artichoke hearts
½ bag of Baby arugula
2 tablespoons Extra virgin olive oil
1/2 cup Vinegar (balsamic, seasoned rice, red, white, or a mixture)
Salt
Pepper
Grated Parmesan cheese
Preparation: Cut the asparagus into pieces 1-2 inches in length. Halve the olives. Thinly slice the red onion. Drain and quarter artichoke hearts. Bring large salted pot of water to boil. Add tortellini and reduce heat to boil softly. Add asparagus to boiling tortellini for the last 3 minutes. Drain the pasta and asparagus. Toss all vegetables in a large mixing bowl. Combine oil, vinegar, salt and pepper with a whisk. Stir together drained tortellini, asparagus, and vegetables. Add oil and vinegar mix and stir to coat all ingredients. Sprinkle with Parmesan cheese and serve. Serve warm or cold.
