Carnitas
Ingredients: 1 boneless pork shoulder butt roast (3-4 lbs)
4 garlic cloves, minced
2 tsp. olive oil
1 tsp. salt
1/4 tsp. red pepper
1 large white onion, quartered
1 bunch fresh cilantro
1 cup Pace salsa
1 cup chicken broth
2 cans chopped green chiles
Juice from 2 limes
2 oranges, halved
Toppings:
chopped cilantro
avocado, diced
pico de gallo
queso fresco or shredded cheese
Preparation: Combine garlic, oil, salt, and pepper; rub all over meat. Place roast in slow cooker. Add onions, whole cilantro, salsa, broth, lime juice, and chiles. Squeeze juice from oranges over everything, add orange halves to slow cooker. Cover and cook on low for 6-8 hours or until meat is tender. Remove meat, cool slightly.
Strain liquid from slow cooker, discarding solids. Return liquid to slow cooker, add pork and heat through.
Serve on tortillas with toppings of your choice.
