Taco Salad
Ingredients: 4 oz. sour cream
2 limes, juiced and zested
1 clove garlic, minced
1/4 tsp salt
1/2 tsp chili powder or to taste
1/2 tsp sugar
4 Tbsp olive oil
4 8-inch flour tortillas
1 lb. ground beef
1 pkt. taco seasoning mix
iceberg lettuce, chopped
1 cup shredded Mexican cheese
1 large tomato, chopped
1 cup corn kernels
1 can sliced black olives
1 can black or pinto beans
1 avocado, chopped
1 cucumber, peeled and chopped
1 jalapeno, sliced thin
cilantro, chopped
Preparation: Combine sour cream, juice and zest from limes, garlic, salt, chili powder, sugar, and oil in a small mixing bowl. Whisk to combine, set aside.
Heat oven to 425 degrees. Crumple 4 large sheets of foil to make 4 3-inch balls; place on baking sheet. Place 1 tortilla over each ball; spray with cooking spray. Bake 6-8 minutes or until tortillas are golden brown.
Meanwhile, cook meat with taco seasoning mix as directed on package. Fill shells with lettuce, meat, cheese and other toppings just before serving. Drizzle with dressing.
