Toaster Oven Baked Eggs
Ingredients: 2 eggs per person
Butter
Toppings:
5 grape or cherry tomatoes, halved
1 strip of bacon, browned & chopped
Grated sharp cheddar
Add tomatoes to dish, sprinkle with a little bit of salt. Add bacon & cheese to each dish, then eggs.
Or:
Spinach, chopped
5 grape or cherry tomatoes, halved
Mozzarella, ¼” chunks
Cook spinach just until wilted, place in dish. Add tomatoes and sprinkle with a little salt. Add mozzarella, then eggs.
Or:
Canadian bacon
Tomato, thinly sliced
Grated parmesan
Place Canadian bacon on bottom, add tomato, then eggs. Top with parmesan.
ramekins or muffin tin
Preparation: Pre-heat the toaster oven to 375 degrees. Grease each of the ramekins or muffin cups with butter. Add toppings and then crack two eggs into each dish. Place in oven. Cook until the egg whites turn opaque, roughly 15-20 minutes, rotating once. It could be less depending on toppings, so start checking after 10 minutes.
