Peach Cobbler (gluten free)
Ingredients: Cake:
2/3 cup cane sugar
1/4 cup avocado or vegetable oil
2 eggs, room temperature
2/3 cup unsweetened coconut milk yogurt
1 Tbsp vanilla extract
1 1/4 cups almond flour
3 Tbsp tapioca flour
1/2 tsp baking powder
1/4 tsp salt
Filling:
10 fresh peaches
1/2 cup plus 1 Tbsp cane sugar
1 tsp fresh lemon juice
1/4 tsp sea salt
1/4 tsp cinnamon
1 Tbsp tapioca flour
1 tsp vanilla extract
Preparation: Preheat oven to 350 degrees. To easily peel the peaches, dip in a pot of boiling water for about 30 seconds and then immediately immerse in ice water.
Slice the peaches, place in an oven safe skillet with sugar, lemon juice, salt, and cinnamon. Heat over medium heat. Stir to dissolve the sugar and coat the peaches. Bring the peaches to a simmer. Once they are bubbling, add the tapioca flour. Stir to combine. Cook for about 3 minutes until slightly thickened, stirring constantly. Remove from heat.
In a bowl, whisk the sugar and oil together. Add eggs and whisk until fully combined and lighter in color, about 2-3 minutes. Whisk in yogurt and vanilla extract until fully combined. Pour in dry ingredients, stir until just mixed together.
Pour cake batter over peaches. Bake in preheated oven 35-40 minutes.
