Lemon Cookies
Ingredients: 227g butter, room temperature
280g sugar
1 Tbsp. vanilla extract
1 egg
320g all purpose flour
2 tsp. baking powder
3/4 tsp. salt
2 tsp. lemon zest
Glaze:
1 cup powdered sugar
1 tsp. lemon zest
2 Tbsp. fresh lemon juice
1 Tbsp. milk
Preparation: Cream butter until smooth. Add sugar and cream 5 minutes or until sugar is dissolved. In a separate bowl combine flour, baking powder, and salt.
Add vanilla and egg to butter, mix well. With mixer on low speed, add dry ingredients little by little until well mixed. Mix in lemon zest.
Using a #24 scoop, make 20 cookie dough balls and place them on baking sheet with parchment paper. Place in freezer while oven heats.
Heat oven to 350 degrees. Bake cookies 12-14 minutes or until the bottom is golden. Allow to cool completely.
Combine glaze ingredients, whisk until smooth. Drizzle glaze onto cookies.
