Potato Cakes     

Ingredients:
4 cups shredded potatoes
3 Tbsp flour
1 egg, lightly beaten
1 tsp salt
1/4 tsp pepper
3 Tbsp onion, chopped fine

Preparation:
Rinse potatoes in cold water; drain well. Place in a large bowl. Add egg, flour, onion, salt & pepper; mix well. Heat 1/4 inch of oil over medium heat. Drop batter by 1/3 cupfuls in hot oil, flatten to form cake. Fry until golden brown, turning once. Drain on paper towels.
