Herb Gremolata
Ingredients: 1/2 bunch flat leaf parsley leaves
1 garlic clove
1 lemon
pinch of salt
extra virgin olive oil
juice of half a lemon
Preparation: Finely chop parsley. Grate garlic and lemon zest into bowl with parsley, add salt and mix together well. Optionally, add olive oil and lemon juice to use as a sauce.
Serve over seared fish, hummus, or roast chicken, steak, or lamb.
