Spinach Stuffed Tomatoes     

Ingredients:
10 oz frozen chopped spinach
4 large tomatoes
1 cup soft bread crumbs
1/2 cup parmesan cheese
1/2 cup finely chopped onion
1/2 cup butter, melted
1 egg, slightly beaten
1 garlic clove, minced
1/4 tsp pepper

Preparation:
Cook spinach, drain well & press out excess liquid. Cut tops off tomatoes & scoop out middle. Lightly salt tomatoes; place with cut side down on paper towel for 15 minutes. Combine spinach, bread crumbs, parmesan cheese, onion, butter, garlic & pepper; mix well. Place tomatoes, cut side up, in a shallow baking dish. Divide the spinach mixture between tomatoes. Sprinkle with additional parmesan cheese. Bake at 350 for about 15 minutes or until heated through.
