Cajun Oyster Dressing
Ingredients: 1 Tbsp. olive oil
3/4 cup diced yellow onion
3/4 cup chopped bell pepper
3/4 cup chopped green onion
3/4 cup chopped celery
1 cup oysters with liquid, chopped
1/2 Tbsp. salt
1/2 Tbsp. cayenne pepper, or to taste
1/2 Tbsp. garlic powder
1/2 Tbsp. thyme
1 1/2 cups French bread cubes
1/2 cup parmesan cheese
1/2 cup panko crumbs
Preparation: Preheat oven to 350 degrees. Coat a 8x8 inch baking pan with nonstick cooking spray.
In a large skillet, heat the olive oil over medium heat and saute the onions, green onions, celery, and bell pepper. When the yellow onions and celery are translucent, add the oysters and oyster liquor. Stir in the salt, cayenne, garlic powder, thyme, bread cubes, and cheese.
Transfer to prepared baking pan, top with bread crumbs. Bake 20 minutes.
