Fig & Mascarpone Phyllo Bites     

Ingredients:
1/2 pound dried Calimyrna or Mission figs, cut into quarters (about 1 1/4 cups)
1/4 cup honey
2 teaspoons lemon juice
2 teaspoons orange juice
mascarpone or cream cheese, softened
phyllo sheets
1/2 cup butter, melted

Preparation:
Place the figs into a 2-quart saucepan and add water to cover. Heat over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 45 minutes or until the figs are soft, adding additional water, if needed. Drain the figs, reserving the cooking liquid.

Place the figs, honey, lemon juice and orange juice into a food processor. Cover and process until the mixture forms a thick paste, adding some of the reserved cooking liquid, if needed. Let the fig mixture cool to room temperature.

Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to prevent drying); lightly brush with butter. Repeat until 3 sheets are layered, do not butter third sheet. Gently press phyllo sheets together. With a pizza cutter, cut into 6 squares. Spoon about 1 tsp. fig mixture and 1 tsp. cheese in the center of each square. Fold corner to corner, pinching corners together, creating a little bundle. Gentle place it into a mini muffin tin that has NOT been sprayed.

Bake at 400 degrees for 10 minutes until dough is cooked and is light brown. Serve warm.
