Ham Potato Scallop     

Ingredients:
1-1/2 cups cubed cooked ham
1/2 chopped onion
4 potatoes, peeled & thinly sliced
2 Tbsp butter
2 Tbsp flour
1/4 tsp salt
dash pepper
1-1/2 cup milk
Velveeta
1/4 cup fine dry bread crumbs
2 Tbsp parsley
1 Tbsp butter, melted

Preparation:
In a 1-1/2 quart casserole layer half of the ham, half of the onion and half of the potatoes. Repeat layers. For sauce, melt butter in a small saucepan. Stir in flour, salt and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Stir cubed cheese in until melted. Pour over potatoes. Bake, covered, in a 350 degree oven about 1 hour or until potatoes are almost tender. Mix crumbs, parsley and butter. Sprinkle atop casserole. Bake, uncovered, for 15 minutes more. Let stand 10 minutes.
