Tzatziki
Ingredients: 1 cucumber, peeled
Salt
2 cups plain Greek yogurt, I prefer Fage
1/2 medium onion, finely chopped
1 small clove garlic, minced
2-4 teaspoons fresh lemon juice
Preparation: Coarsely grate or finely chop cucumber. Stir in a little salt and let stand 30 minutes. Combine all ingredients. Season to taste with salt.
If your yogurt isn't very thick, you may want to drain off some of the cucumber juice. If using Fage, leave the cucumber juice in for more flavor.
