Ceviche     

Ingredients:
1 pound peeled, deveined medium shrimp, cut in half
1 cup fresh lime juice
10 plum tomatoes, diced
1 yellow onion, diced
1 jalapeno pepper, seeded and minced
2 avocados, diced
cilantro, chopped
salt and pepper to taste

Preparation:
Place shrimp in a glass bowl and cover with lime juice for about 10 minutes or until pink and opaque.

Place all remaining ingredients except cilantro, salt and pepper in a large glass bowl. Mix in shrimp, cilantro, salt and pepper to taste.
