Apple Bread with Salted Caramel Icing     

Ingredients:
3 cups apples peeled, cored, and cubed
1 cup sugar
2 eggs
1 tbs vanilla
1 tbs apple pie spice
2 cups flour
1 stick butter
1 tbs baking powder

For the topping:
1/2 stick salted butter
1 cup brown sugar
1/2 cup heavy cream
1 cup powdered sugar

Preparation:
In mixer cream together eggs, butter, apple pie spice, and sugar until creamy and smooth. Stir in apples. In another bowl mix flour and baking powder, add dry ingredients to wet mix. Pour into 7" springform pan. Place trivet in the bottom of Instant pot and one cup of water. Place pan on the trivet. Put on manual high pressure for 70 minutes, quick release. Remove and top with Icing.

Icing Directions: Melt butter in a small saucepan, add brown sugar and let come to a boil. Continue cooking for 3 minutes or until sugar is melted. Stir in heavy cream, continue cooking for 2-3 minutes until slightly thickenened. Remove from heat and let completely cool. Mix in powdered sugar with a whisk until creamy with no lumps.
