Chinese Beef & Broccoli
Ingredients: 1½ lb. boneless, beef chuck roast, sliced into thin strips
1 cup beef broth
½ cup soy sauce
⅓ cup brown sugar
1 tbsp. sesame oil
3 garlic cloves minced
2 tbsp cornstarch
Fresh or Frozen Broccoli Florets, about 3 cups
White or brown rice, cooked
Preparation: In a mixing bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, and garlic. Combine beef and sauce in slow cooker, stirring to coat. Cook on low 4-5 hours.
Use 4 Tbsp of the sauce and whisk in a small bowl with the cornstarch. Slowly stir this into the crockpot. Add broccoli and cook an additional 30 minutes. Serve over rice.
