Swiss Steak
Ingredients: 1 lb beef round steak
2 Tbsp flour
1 Tbsp cooking oil
16 oz can tomatoes, cut up
1 small onion, sliced
1/2 cup sliced celery
1/2 cup sliced carrot
1/2 tsp dried thyme, crushed
2 Tbsp quick cooking tapioca
2 cups hot cooked noodles
Preparation: Cut meat into 4 pieces. Trim fat. Combine the flour, 1/4 tsp salt and 1/4 tsp pepper. With a meat mallet, pound flour mixture into meat. Brown meat in hot oil. In a crock pot place onion, celery and carrot. Sprinkle with thyme, tapioca, 1/4 tsp salt and 1/4 tsp pepper. Pour undrained tomatoes over vegetables. Add meat. Cover; cook on low heat setting for 10 to 12 hours. Serve over noodles.
