Balsamic Stir Fried Kale
Ingredients: 1 Tbsp. olive oil
3 oz. pancetta or bacon, chopped
1 medium red onion, finely chopped
kale, washed and roughly chopped
1 Tbsp. balsamic vinegar
1 Tbsp. chicken stock
Preparation: Heat wok on high and add olive oil and pancetta. Cook for about 4-5 minutes, then add chopped onions. Cook until onions are slightly browned and pancetta is crispy, about 3-4 minutes. Add kale and mix together. Drizzle with balsamic vinegar and stock and cover the wok with a large lid. Shake the wok to steam and cook about 1-2 minutes. Serve immediately
