Brittany's Spaghetti Pie
Ingredients: Noodles:
6 oz. spaghetti
2 eggs
1/4 cup fresh grated parmesan
Meat Sauce:
1 pound Italian sausage
6 oz. can tomato paste
1 cup water
Filling:
2 Tbsp. butter
1/3 cup chopped onions
1 cup sour cream
8 oz. mozzarella, sliced or shredded
Preparation: Preheat oven to 350 degrees.
Break spaghetti in half. Cook in boiling salted water until done. Drain. While still warm combine spaghetti with eggs and parmesan. Pour into a well-greased 10 inch pie plate and pat mixture up around the edges with a spoon.
While cooking spaghetti, remove sausage from casing, crumble and cook in skillet until done. Drain. Add tomato paste and water. Simmer 10 minutes.
Meanwhile, melt butter, add onions and sauté until limp. Stir in sour cream and spoon over spaghetti. Spoon sausage mixture over sour cream mixture.
Bake at 350 for 25 minutes.
Arrange cheese on top and return to oven until melted.
