Chocolate Cinnamon Donuts
Ingredients: 2 eggs
1-1/4 cups sugar
1/4 cup vegetable oil
1 tsp vanilla
4 cups all purpose flour
1/3 cup baking cocoa
4 tsp baking powder
1 tsp ground cinnamon
3/4 tsp salt
1/4 tsp baking soda
3/4 cup buttermilk
oil or shortening for deep frying
GLAZE:
4 cups sifted confectioner's sugar
1 tsp vanilla
1/2 tsp ground cinnamon
6 Tbsp milk
Preparation: Beat eggs; add sugar and beat until thick and lemon-colored. Stir in oil and vanilla. In another bowl, combine flour, cocoa, baking powder, cinnamon, salt and baking soda. Stir into egg mixture alternately with buttermilk. Chill. Divide dough in half; leave one half in refrigerator. On a lightly floured board, roll other half to 1/2" thickness. Cut with a 2-1/2" floured doughnut cutter. Repeat with remaining dough. In a deep-fat fryer, heat oil to 375o; fry doughnuts for 3 minutes, turning once. Place on paper towels. Combine glaze ingredients and dip tops of warm doughnuts.
