Salmon Chowder     

Ingredients:
4 Tbsp olive oil
2 small onions, finely diced
1 celery stalk, chopped
2 cloves garlic, finely minced
3 cups chicken stock
14.75 oz. can boneless skinless salmon, drained
1 cup diced potatoes
10 oz. frozen corn
1 cup half and half
1 cup milk

Preparation:
In a large stockpot, heat olive oil over medium-high heat. Add onion and garlic, and sauté for about 3 minutes, or until the onion is soft. Add flour and cook for about 2 minutes, stirring constantly. Add the chicken stock and stir with a whisk. Bring to simmer, then reduce heat to low. Stir in salmon, potatoes, and corn. Simmer for about 20-30 minutes, or until potatoes are cooked and tender. Stir in the cream and milk. Let simmer about 3 minutes until warm throughout. Add salt and pepper to taste.
