Banana Cake     

Ingredients:
CAKE:
2 1/2 cup flour
1 tsp salt
1 2/3 cup sugar
1 1/4 tsp baking soda
1 1/4 tsp baking powder
2/3 cup shortening
1 cup buttermilk, divided
1 1/4 cup mashed bananas
2 eggs
ICING:
1 cup milk
1/4 cup flour
1 cup shortening
1 cup sugar
2 tsp. vanilla

Preparation:
CAKE:
Combine dry ingredients. In separate bowl, mix shortening, 1/3 cup buttermilk & bananas. Mix with dry ingredients, then add 2/3 cup buttermilk & eggs; mix well. Bake at 350 for 20-30 minutes.

ICING:
Cook 1 cup milk & 1/4 cup flour together until thick. Cool. Beat 1 cup shortening & 1 cup sugar. Combine the 2 mixtures & 2 tsp vanilla. Beat until texture of whipped cream. Spread on cooled cake.
