Plum Jam     

Ingredients:
3 lb. Plums
7 ½ cups sugar
1 pkg. liquid pectin

Preparation:
Leave skins on plums. Pit and finely chop plums. Place plums and ½ cup water in saucepan. Bring to boil. Reduce heat; cover and simmer 5 minutes.

Measure 4 ½ cups (exact) finely chopped cooked plums. Add 7 ½ cups (exact) sugar. Bring mixture to full rolling boil on high heat, stirring constantly. Stir in pectin quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Ladle into prepared jars, to within 1/8 inch of tops. Process according to pectin package.
