Mashed Cauliflower     

Ingredients:
1 Cauliflower, head
1 cup Water
⅓ cup Grated Parmesan cheese
2 tablespoons butter plus more for serving
2 tablespoons cream cheese
½ teaspoon garlic powder
½ teaspoon salt

Preparation:
Wash the cauliflower and cut it into equal large size florets. Add water to the instant pot insert. Place the steamer basket in the instant pot insert with the cauliflower florets. Cook on high pressure for 0 minutes, quick release. Using a paper towel, dab cauliflower as dry as possible.

Place the warm cauliflower in a large bowl along with the parmesan cheese, butter, cream cheese, garlic powder and salt. Use an immersion blender to blend until smooth and creamy.
